As you can see from the photos, the olive trees used for the production of this oil are located
immersed in the hills of Reggio Calabria, about 600 meters high.
The olive trees, mostly centuries-old, are grown organically, no chemical products
it is used, as per family tradition handed down over the decades.
The harvest takes place manually without the use of 2024 operating machines, the olives are
harvested and in the same day they are transported to the mill to be processed,
The crusher used is of the "Cold" type (brand AlfaéLaval) which determines the best extraction of the oil without altering
the organoleptic and nutritional properties.
The oil produced is consumed regularly by my family, and the extra one produced is sold locally
or sent to friends.
I could define the taste of this oil quite delicate, the color is an intense green.
